Start with how you drink it
- Black: roast level and finish are easier to notice, so begin with where you want to sit from lighter to darker.
- With milk or cream: decide whether you want the coffee to stay noticeable through the add-in.
- Iced: account for melting ice and whether you are brewing directly over ice or using concentrate.
- Espresso drinks: choose a coffee you enjoy with the amount and type of milk you actually use.
Use the finish as the tie-breaker
The finish is what remains after the sip. If it is dry, harsh, smoky, thin, or simply not enjoyable, record that in plain words. That note is more useful than pretending there is a universal good or bad coffee.
