A Practical Guide to Choosing and Brewing Better Coffee

Better coffee does not require a vocabulary test or a cabinet full of equipment. Start with the roast you enjoy, use fresh water, measure consistently, and change one variable at a time.

Choose by roast first

Wild Calf's five core blends run from lightest to darkest: Morning Kick, Run Wild, Plains Drifter, Cattle Baron, and 5 Wire. If you are unsure, begin with a 12 oz bag near the middle of the lineup and move lighter or darker on your next order.

Use a repeatable starting recipe

For drip or pour-over coffee, start near one part coffee to sixteen parts water by weight. Keep the coffee dose steady while you adjust grind size. If the cup tastes thin or sour, grind a little finer. If it tastes harsh or dry, grind a little coarser.

Pay attention to the finish

The finish is what remains after you swallow. A clean finish makes a cup easy to return to. If the finish is rough, first check water quality, grind size, brew time, and whether the equipment needs cleaning.

Buy the amount you will use

A smaller bag is useful for a first try. Larger bags cost less per ounce when you already know the coffee fits. A subscription is optional and should only be used when a repeat delivery is actually useful to you.
