Coffee is an agricultural product, so the same named coffee can taste a little different from one harvest or lot to the next. That variation is normal, but it should not be hidden from the customer.
What can change
- Weather and growing conditions
- The farm, cooperative, or lot available that season
- Processing and drying choices at origin
- Time spent in storage and transit
What that means in the cup
A familiar coffee may lean a little brighter, sweeter, heavier, or drier than the previous lot. Those words describe perception, not a guarantee that every person will taste the same thing.
What to do at home
Keep your coffee dose steady and adjust the grind before changing everything else. A slightly finer or coarser grind may be enough to bring the cup back into balance.
If a bag does not taste the way you expected, tell us what brewer and recipe you used. Useful troubleshooting is better than pretending every harvest is identical.
